Spring Rolls

Hi everybody ♡ ,

Sometimes you are not in a mood to cook extra ordinary or difficult dishes!

Well, I have an easy and delicious healthy solution: Homemade Spring Rolls.

You can put whatever you want in them, but I've choosen to grill some veggies and to add some salmon. If you want it to be vegan, add some grilled tofu or soy soaked tofu.

What you need for the springrolls:

  • 200g Rice Noodles

  • 200g Salmon

  • 1 Zucchini

  • 2-3 Sweet Potato

  • 100g Mushrooms

  • 1 ripe Avocado

  • Rice Paper

  • Cilandro

  • Soy Sauce

  • Olive oil

  • Pepper & salt

  • Pumpkin seeds

  • Sunflower seeds

What you need for the dressing:

  • 1 cup Soy sauce

  • ½ cup Rice vinegar

  • 1 tablespoon Tahini

How to:

  • Cut the salmon in long pieces. Let it soak in soy sauce for 15 minutes.

  • Cut the zucchini and the sweet potato in sticks. The mushrooms in slices.

  • Put all the vegetables on a baking plate. Sprinkle with olive oil (or coconut oil) and some soy sauce on mushrooms, pepper & salt. Leave in the oven for 20 to 30 minutes.

  • Put the seeds next to the veggies so they also grill a bit

  • Put the rice noodles in hot water for 10 minutes (check the instructions on packing, time depends on thickness of the noodles).

  • Slice the avocado

  • Boil some water and put in into a large deep plate

  • Dip the rice paper into the hot water for 3-4 seconds, the rice paper becomes weak & soft

  • Put it on a dry towel, and you can start filling up the rice paper roll.

  • Layer everything up starting with the noodles and add the veggies, salmon, finish with the avocado, some cilantro and the grilled seeds. Center everything, to simplify the rolling

HOW TO ROLL UP:

Begin by pulling up the bottom part (cover the filling), make one roll, then fold the sides and continue rolling until it's rolled. ​

  • For the dressing: put everything in a blender and mix up. Sprinkle on the rice paper rolls to finish it up.

  • You can add a little salad!

  • Ready to be served!
