Vegan Eggplant Spread

In need of an easy & healthy vegan spread?

What you need:

  • 1 big eggplant

  • Tahini

  • Olive Oil

  • Cumin

  • Pepper & Salt

How to:

  • Preheat the oven on 200degrees C°

  • Slice the eggplant in half , put some olive oil on it, pepper & salt

  • put the eggplant in the oven for 20minites

  • once the eggplant is totally cooked, you will see the eggplant will have a soft texture

  • put everything in a blender (without the skin, use a spoon to separate the skin from the flesh)

  • Add some grilled seeds and rucola on top of your toast and lunch is served! You can also use it as a dip with carottes and celery.
