
In need of an easy & healthy vegan spread?
What you need:
1 big eggplant
Tahini
Olive Oil
Cumin
Pepper & Salt
How to:
Preheat the oven on 200degrees C°
Slice the eggplant in half , put some olive oil on it, pepper & salt
put the eggplant in the oven for 20minites
once the eggplant is totally cooked, you will see the eggplant will have a soft texture
put everything in a blender (without the skin, use a spoon to separate the skin from the flesh)
Add some grilled seeds and rucola on top of your toast and lunch is served! You can also use it as a dip with carottes and celery.
