Vegetable pizza crust & spinach pesto

Longing for a pizza? But want to keep it healthy? Here's an amazing pizza recipe with cauliflower and vegan spinach pesto! It's quick - healthy & so delicious.

Why cauliflower?

Cauliflower is an excellent source of vitamins :

  • Vitamin K, which regulates inflammatory reactions

  • Vitamin B6 regulates the action of certain hormones and the proper functioning of the immune and nervous systems

  • Vitamin C stimulates our immune system.

But it's also full of good nutrients like choline, fiber, and omega-3 fatty acids.

Here's what you need.

Pizza crust :

  • 1 cauliflower

  • 1 egg

  • 50gr of parmesan

Topping :

  • Mushrooms

  • Feta

  • Dried Tomatoes

  • Spinach pesto

  • Cup of soaked cashews

  • 2 big hands full of spinach

  • 3 tablespoons parmesan

How to :

  • Mix the raw cauliflower in a blender.

  • Put the mixture in a towel & squeeze out all the water.

  • Add the egg & parmesan.

  • Make a round pizza shape.

  • Put into the oven (180°) for 10 min, and flip the pizza crust on the other side for another 5-10 min.

  • For the spinach pesto: put the soaked cashews - spinach and parmesan in a blender with some pepper/salt. And mix until smooth.

  • Add the toppings & put the pizza back in the oven (180°) for 15 minutes.

You can always replace the cauliflower with broccoli or zucchini. (Pizza left on the picture).
