Vegan Chili Sin Carne

Helloooooo,

Time for an over-delicious easy vegan recipe!!

When you come home from work/school/... you aren't really in the mood to cook something difficult so I have the solution! It's easy, njammie and vegan! And yes I know, most of the time when you say vegan, people think you will still be hungry after it?! But no it won't be the case, I promise!

It's the vegan variety of Chili Con Carne. I got inspired by Byebyecheeseburger! I love her recipes!! Instead of meat, I use different sorts of beans; lentils, chickpeas, and red and white beans. (Beans are full of good proteins!!)

What you need: For 3 portions

For the Chili :

  • 400ml of chopped tomatoes (1 can)

  • 400g of lentils (1 can)

  • 400g of a mix of beans (1 can)

  • 4 carrots

  • 1 big red onion

  • Red paprika powder

  • Salt / Pepper

  • Cilantro, a looooooot!!

All the ingredients bought at Bio C'est Bon (Brussels, Ixelles)

Instructions:

  • First chop the onion, the carrots and put them in a big steelpan (like for a wok) with olive oil and add the spices. Steer for 5-10 minutes.

  • Add the Lentils and beans, cook for 5-10minutes

  • Add the chopped tomatoes and add some water (to rinse out the can)

  • Let it simmer for 30 minutes, so it will become a thick mass

  • Add the cilantro at the end

For the guacamole (I like it really plain with not too many additions)

  • 2 big ripe avocados

  • Paprika powder

  • Salt & Pepper

  • Lemon juice

You can add some baked sweet potato (30 minutes in the oven at 180°C) or red rice or couscous!

I finished the dish with some guacamole on top and cilantro! Njammie!!

I was as happy as a pineapple seeing this beautiful dish!!
