Vegan Matcha Macarons

Nothing better than real Parisian Macarons with a vegan touch!

So here is my recipe for vegan matcha macarons filled with vegan chocolate!

What you need :

For the Macarons:

  • 250 ml of chickpea liquid

  • 150g of powdered sugar

  • 145g almond meal

  • 7g of Baking soda

  • 100g granulated sugar

  • 1 big tablespoon of IRO Matcha (Find the matcha here)

For the Chocolate filling :

  • 300g hazelnuts

  • 3 big tablespoons of raw cacao

  • 50ml of vegetable milk (I used Almond-Rice milk)

How to :

For the macarons:

  • Preheat the oven to 120°C

  • Heat the chickpea liquid on low heat and let it reduce to 80ml.

  • Once reduced, beat the chickpea liquid to obtain a "chickpea mousse" (the same way you would beat egg white)

  • Add the baking soda and granulated sugar to the chickpea mousse

  • Beat again until you obtain soft peak forms

  • Mix all the other dry ingredients in a bowl & sift the dry mixture

  • Mix the beaten chickpea with the dry ingredients

  • Bring everything in a piping bag or like I did in a plastic bag (check video) and bring small round amounts on a baking sheet

  • Wait until everything is dry (+-2hours)

  • Put in the oven for 30min

  • Let cool down for 10-15min

  • Put some chocolate filling on one side and put another macaron biscuit on top of it

For the chocolate filling:

  • Put 300gr of hazelnuts on a baking sheet and put in the oven for 10 minutes at 150°C

  • Put all the hazelnuts into a blender and blend until smooth

  • Once it became nut butter add the raw cacao

  • Add the milk and blend everything one last time

  • Ready to fill the macarons
