Vegetable pizza crust & spinach pesto
Longing for a pizza? But want to keep it healthy? Here's an amazing pizza recipe with cauliflower and vegan spinach pesto! It's quick - healthy & so delicious.
Why cauliflower?
Cauliflower is an excellent source of vitamins :
Vitamin K, which regulates inflammatory reactions
Vitamin B6, regulates the action of certain hormones and proper functioning of the immune and nervous systems
Vitamin C, that stimulates our immune system.
But it's also full of good nutrients like choline, fibre, and omega-3 fatty acids.

Here's what you need.
Pizza crust :
1 cauliflower
1 egg
50gr of parmesan
Topping :
Mushrooms
Feta
Dried Tomatoes
Spinach pesto
Cup of soaked cashews
2 big hands full of spinach
3 tablespoons parmesan
How to :
Mix the raw cauliflower in a blender.
Put the mixture in a towel & squeeze out all the water.
Add the egg & parmesan.
Make a round pizza shape.
Put into the oven (180°) for 10 min, flip the pizza crust on the other side for another 5-10min.
For the spinach pesto : put the soaked cashews - spinach and parmesan in a blender with some pepper/salt. And mix until smooth.
Add the toppings & put the pizza back in the oven (180°) for 15minutes.

You can always replace the cauliflower by broccoli or zucchini. (Pizza left on the picture).
