The Cozy Butternut Soup for Winter Days

There’s nothing I love more than a warm bowl of homemade soup when the weather turns cold — especially a creamy, nourishing butternut vegetable soup that fills the house with the most comforting smell.
This recipe is incredibly simple, packed with vegetables, and naturally soothing. I make it almost every week during winter, and the boys love it too. The bone broth adds extra nutrients (hello minerals & collagen!), and the roasted cashews on top give the soup the perfect little crunch.
It’s one of those recipes that makes you feel taken care of — warm, grounding, and so good for your body.

Ingredients
½ butternut
1 fennel
4 carrots
½ zucchini
1 leek or 1 onion
A few garlic cloves
Bone broth (fresh or powder)
Rosemary
Salt & pepper
Ghee or olive oil (to sauté)
Toppings: fresh parsley, roasted cashews, olive oil
Instructions
Start by blending your leek (or onion) with garlic in a bit of ghee or olive oil. (Thermomix: speed 5, blend 5sec)
Let it cook gently for a few minutes until fragrant. (Thermomix : 3 to 5minutes, heat 95°C)
Add the butternut, fennel, carrots, zucchini, rosemary, salt and pepper.
Cook for about 8 minutes. (Thermomix : 8minutes, heat 95°C)
Add water and/or bone broth until the vegetables are well covered. (Thermomix : 15 to 20minutes, heat 95°C)
Blend until smooth and creamy. (Thermomix : 1minut, from speed 6 going up to speed 10)
Serve with fresh parsley, roasted cashews, and a drizzle of olive oil.
That’s it, the simplest, coziest, most nourishing winter soup. Perfect for meal prep, quick lunches, or a comforting evening at home.
