Vegan Berry Cheesecake

I am so excited to share this recipe for vegan cheesecake with you. It is so good, that even non-vegans will most definitely LOVE it…

A vegan cheesecake that tastes like real cheesecake. It's gluten-free, refined sugar-free, and paleo.


Of course, it’s super healthy, with each bite loading you up on incredible health-giving vitamins and nutrients which will fill you with incredible energy.


What we need:



1. Crust:

  • 200g Dates

  • 30g Chia Seeds

  • 70g Nuts (you can choose, I used pecan nuts)

  • 30g Agave syrup

  • 2 tbsp Almond butter

  • 3 tsp Cocoa powder

  • ¾ tsp Vanilla extract


2. Cream filling


  • 260g Silken tofu or normal tofu

  • 80ml Coconut milk (only the hard part - canned or in brick)

  • 30g Agave sirup

  • 21g Coconut oil

  • 1 tsp Vanilla extract

  • 60g Frozen berries (mix of raspberry & blueberry)

  • Juice of 1/2 lemon


How to:

  1. In a medium bowl or blender, mix together all the ingredients for the crust: chia seeds, agave syrup, sunflower seed butter, cocoa powder & vanilla extract. Make sure you stir thoroughly until the dough gets crumbly and sticks together when you press it between your fingers.

  2. Spread the crust evenly in one large tart pan, then set into the freezer to rest.

  3. Now, combine the silken tofu, coconut milk, agave syrup, coconut oil, frozen berries & vanilla extract and blend them together until you get a smooth & creamy texture. Add the lemon at the end and blend again.

  4. Spread the filling onto the crust and add some extra frozen berries (or any other topping of your liking).

  5. Put the tart in the freezer for about 1h to 3h.

  6. You’ll need to remove the cake from the freezer and allow it to warm up for a few minutes before you serve it.

This cheesecake is absolutely heavenly. I am totally obsessed. It just tastes so outrageously incredible. It’s awesome for the summer too as not only is it deliciously cooling, as it requires no cooking, it’s also brilliantly light and delicate.



Interesting fact: Did you know that blueberries have one of the highest antioxidant levels of any food on the planet, which means that they have amazing anti-inflammatory properties which help the body to fight off chronic diseases? So, get eating this yummy dessert, and enjoy it!
